Valentine's Day Roasted Beet Salad

This is one of my favorite salads! I love the combination of the beets and cheese, along with the crunch of the nuts. I’ve also substituted Gorgonzola cheese and chopped almonds for the goat cheese and walnuts. When I have the time, I roast fresh beets, but always good to have a quick, already prepared option, which I’ve included here.

Arugula is antioxidant-rich with vitamins A, C and K, and is also a good source of the B vitamin folate. Beets are a good source of potassium, folate and fiber. Walnuts are also rich in antioxidants and provide healthy omega 3 fats, making this a salad that’s good for your heart!

Beet Salad w. goat cheese & walnuts

Ingredients:                                                              

4 cups loosely packed arugula

1 (8 oz.) package Trader Joe’s roasted baby beets, halved and sliced

2 green onions chopped

3 Tablespoons crumbled goat cheese

¼ cup chopped, toasted walnuts

2 Tablespoons Girard’s Light Champagne salad dressing

Preparation:

Combine arugula, beets and green onions in a large bowl; toss gently.

Add salad dressing and toss to combine.

Using tongs, place equal amounts of salad on 2 plates.

Sprinkle with cheese and walnuts, then serve.

Makes 2-4 servings.
