I love this lentil soup! It’s hearty for those cold nights, yet healthy. And so quick & easy to make - -What’s not to love about that?! Lentils are one of my go-to healthy foods. They're rich in fiber, B vitamins, minerals and protein. Aim for a serving of beans or lentils every day.
Ingredients: PRINT RECIPE
2 teaspoons olive oil
½ medium red onion or 1 large shallot
Pinch of red pepper flakes (optional)
Kosher salt to taste
Black pepper to taste
10 cremini mushrooms, halved and sliced
2 medium carrots, peeled and chopped
1 (17.6 oz.) package Trader Joe’s cooked lentils
1 (32 fl. oz.) carton vegetable broth
1. Heat oil in a large sauté pan. Add onion, red pepper flakes, a pinch of salt and pepper; cook for 2 minutes.
2. Add mushrooms and cook an additional 2 minutes.
3. Add carrots and cook until carrots are crisp tender
4. In a medium pot combine lentils and vegetable broth. Heat hile vegetables are cooking on medium heat. Add vegetable mixture, additional salt and pepper to taste, and cook until bubbling and heated through.
5. Serve & Enjoy!
